Does it matter who my hosting site is if I want to use Gallery?

I originally signed up with SBI (site build it) for the domain name, becaues I like some of their benefits, main the traffic one, but they didnt seem to have a great hosting side for files and stuff so I went ahead and signed up with Fatcow to do more indepth organized hosting. Fatcow is wanting me to completely switch to using them and is telling me that the Gallery wont work unless I do. Does anyone know if it matters who your hosting site is to use Gallery?

Well, gallery uses PHP/MySQL, so the host would definitely need those to work.
