I run a gallery with over 300 artists. Subgalleries, and so on.
If someone could please answer a few questions I would be greatful:
-Can I host on Bluehost?
-Do I need to know php to get the look i want (i know xhtml and css)?
-Is there a best theme to structure large galleris of this size (300 artist about 600 albums, 5000 pictures)

According to my Google searches, yes you can.

No. I've modified my personal gallery to look the way I want it, and I can barely spell PHP let alone script with it!

I would say no, because it's the underlying code (not themes) that makes structuring large galleries a breeze.

Thank you for your help. That is reassuring... i just need to get my head around how to make a structure that will fit into my exisiting website.
Oh, one more question... should i use Gallery 1 or Gallery 2?

Well now that's a loaded question
I've only ever used Gallery 2 because it's database driven and it can be embedded into Drupal. You can find a good, thorough rundown of the differences between Gallery 1 and Gallery 2 right here:

You don't need to install Drupal if you don't require the features it provides. For example here are some of Drupal's features that aren't found in Gallery: polls, forums, blogs, support for your own custom pages like About, Help, Contact Us, FAQ, etc.

Very neat! I am however not sure I want to move the entire site. Just the galleries. The website is quite complex, with over 200 articles, forum, galleries, and book recommendations. Take a look and you'll see what I mean:

I'm sure Drupal would be great in the future, or for a new site, but i don't have time to move it all now. I just want a tool that allows me to update the galleries quickly, at the moment, i'm using photoshop templates, and i have to change each file indiviually, it takes forever!

Wow, that's definitely not just a simple little site! I'm quite sure Gallery can handle all of your images though. Although some would say Gallery 2 is getting a little long in the tooth, it does it's job very well.
