How does one change the notifications & invoices sent to checkout orders?

Is there a way to change the templates used in the notification & invoices sent to e-mail orders?

Edit the relevant template files. Follow carefully the instructions at the top of each file, as per the usual procedure for editing template files in Gallery2.
