I've tried several different pdf files and get the same result. Should I re-install ghostscript or is there a way to check the ghostscript settings to see where the problem may lie?

do you have command line access to this server?
if so, first ceck if ghostscript works correctly, then use imagemagick's convert to convert a .ps or a .pdf to a .jpg
