In beta 3 whare can I change the wording and oreder of the "add items" tabs

I would like the "web browser " to be the default

for the english language, the easiest thing would be to change the wording in the modules/core/ItemAdd.inc, ItemAddFromWeb.inc, ... modules/core/templates/ItemAdd....tpl

if you want to change it in another language or would like that that you don't have to change it on every G2 upgrade, you could create your own default site language by copying the language files from your original language and applying some changes.
