don't give guests the "edit item" permission on any album.
i wouldn't give guests any permissions but view plus maybe "add comment" anyway.

Thanks, I have the following permissions set on each album, what should I add/remove/change?
Group name Permission Action
Everybody [core] View all versions [core] View item
Everybody [rating] All access [rating] Add ratings
Everybody [ecard] Send eCards [ecard] Send eCards
Site Admins All access

*Those* permissions look correct, but it could be permissions further down the line that is causing them to be able to do it. Are you sure guests can select highlights? Is is possible you are logged in, then clicking the "guest preview" or "guest" link that tries to *emulate* what a guest would see? If so, that view is not 100% accurate. If you *really* want to see what powers a guest has, you should simply log out and take a look.
What I would do, (if your *entire* gallery should be the same) is do "edit permissions" on the *root* (main, lowest level) album. I would make sure the "recursive" option is selected, then I would *REMOVE* all those permissions and re-add them. That way, it'll reset the permissions on albums across your entire gallery.
