Jest a question, I'm looking at setting a photo and video gallery for my blog. (blog not live yet as i'm still working on it.) I can see that gallery 3 is just about to come out. My question is, should I wait till the final version comes out? I'm lunching my blog first, so if it some time off, it won't matter. Also, how well will it handle playing videos? Also is there a linit in how many photos and videos that you can have?

No limits in any version of Gallery. However, G1 performs very poorly with large numbers of files. G2 and G3 handle that much better, you're going to run into database/hardware bottlenecks first.
G3 will, at first anyway, only support flash video, no WMV or anything like that.

Me, personally, if you're going to spend time customizing it and making something look pretty, get your hand into G3 now and start getting familiar. If you're just going to use out of the box themes, go with G2 and migrate to G3 when it's done. Either way I'd take a look at G3 and G2 and see what's available and what isn't. G2 had many more plugins available for it than G3 does at the moment, so it really gets down to what you want to do.

Hey, Thankyou for getting back to me. The other question that I forgot to add, will it produce valid xhtml and css code? I'm asking because I don't like website that has bad code, plusi I want to make sure that everyone will beable to use it.

It'll produce what every code you want. I don't know if G3's currently only available theme has been validated, but you can code every bit of the publicly facing part of the site.
