Remove/Dont show Photo properties

Site Admin > Plugins uninstall the EXIF plugin.

If I uninstall the EXIF plugin to hide the Photo Properties, am I still able to have my photos in my albums sorted by exif creation date?

Not sure. But you could just remove the block and still have the module activated.
edit album-> theme tab- block to show.... remove the EXIF block.

OK, I found out how to do this for me, based on the clues added here by ya all, thanks...
It is actually under Site Admin - Themes -
Then look for
Blocks to show in the sidebar
Blocks to show on album pages
Blocks to show on photo pages

And make sure
EXIF/IPTC photo info is not selected. If it is, click on it and click on remove, then scroll to the bottom to
Save Theme Settings.

Dave's clue suggests it might be possible to set up exif data availability based on individual albums, I was looking for a way to globally deactivate it.

And as I continue to play around, just a little further down on that screen, I find a tick box that says
Show Photo Properties icon
You could try unticking that...

To globally deactivate it you can go through Site Admin > Themes > YourTheme and make the change there. NOTE: that editing theme settings at the album level overrides the global settings. To revert back to the global settings, go to your main gallery page and click Edit Album > Theme (tab) and make the change there to use the global settings, then you'll be able to set these settings globally.
